Golden Sour with Valencian Clementines
Blended from three batches of golden wort, each brewed with local Scottish barley, wheat and oats, and fermented with multiple Brettanomyces and bacteria strains. Gaining a deep citrus funk from 5 months aging in tank, we decided to pair this base beer with one of our favourite citrus fruits.
We manually zested, juiced and pulped over 100kg of winter harvest clementines from an organic transitioning, pesticide free, Cabet family farm who are part of the Bétera Agricultural Cooperative in Valencia. In addition, we added 200l fresh juice, which was utilised with the spunding method to carbonate the beer using only natural fruit refermentation. This process has the added benefit of trapping delicate fruit aromatics in the beer.

Tap at the wolf Birmingham. A light hazed golden coloured pour with a reluctant white head. Aroma is big sharp, tangy sour lemon, shurbet, rhubard sour. Flavour is composed of super sharp lemon, rhubarb sweets, lemon rind, tangy pineapple. Palate is sharp and tangy, fizzy carbonation. Good stuff.

Hazy orange pour with a white head that dissapears. Aroma is sour at first before tangerine kicks in, some grass and herbs. Taste is citrus, orange, marmelade, pleasantly sour.

Keg at the Wolf, Bingohame, 18/02/23. Moderately hazed orange with an off white cap that thins to nothing. Nose is tangy orange, grass, herb, light funk, balsa wood. Taste comprises sharp citric zest, clementine orange, damp wood, funk. Medium bodied, fine carbonation, semi drying close with a balanced acidic spike. Decent.
