To make its base we blended three barrels of mixed culture Saisons and one Lambic-inspired brew before fruiting the lot. We were really looking to achieve a delicate malt to hop flavour ratio so that our whole, juicy blueberries could shine like the stars they are. It might sound like a dangerous game, but we all came out winners.
