For this Druif, we macerated Muscat Ottonel grapes from Christoph Hoch on lambik.
A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Christoph Hoch is a Demeter-certified wine maker from Hollenburg an der Donau, Austria. He is not only crazy about our lambik, he also has some of it ageing in his own barrel cellar!

75cl Bottle @ Ratebeer Odense, Return to Odense M. Pours cloudy Golden yellow with a White bubbly head. Funk and farmhouse. White grapes. Slight sulphur. Dry finish.

Nice bubbly-creamy mediumlasting head, clear golden color. Aroma is slightly dry sour-ish floral, leafs, old rope, oak, grape peel, grass, hay, minerals, fruit salt, sour grapes. Taste is slightly dry sour-ish fruity, grape peel, sorrel, minerals, old rope, hay, leafs, sour grapes, oak, citrus acid, hints of mild vinegar. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Nice enough.

Muscat was allegedly the first type of grape used in grape lambics in the 19th century, which were consequently dubbed ‘muscat’ metonymically as well; with this historical detail in mind, I am always eager to find out about muscats in this day and age, where almost any grape variety – or fruit species in general for that matter – has been used in lambic. Medium thick, snow white, tiny-bubbled, opening head, initially clear yellow blonde robe, very pure and beautifully glowing, turning cloudy with sediment. Aroma of grape skin, yellow curry, fenugreek seed, raw quince, paprika-flavoured crisps, old wood, unripe green plum, minerals, lemon zest, cava. Tart onset, crisply and lemony sour at first, lots of green apple and sour grape with minerally side notes, astringent in an elegant way, with a lime juice- or yuzu-like citric effect as well; bready core with strongly drying, thorough lactic sourness reinforced by fruit acidity, prevailing far over any limited grape sweetness that is in here. The ‘Indian spice’ accents (fenugreek) return retronasally, adding a very idiosyncratic touch to a long, dry, tannic, bone dry, sour finish. Much drier and more acidic than expected and in that sense surprising compared with many other 3 F grape lambics – and that oriental spice effect in the nose set it even further apart. Quite a unique one, if perhaps not the most accessible of present-day grape lambics.

0,75l at the Lambic-o-droom. Yellow hazy color, small white head. Smells very fragrent, flowery, hay, some sweetness, honey. Very nice smell. Full body, soft carbonation. Tastes flowery, honey, earthy, grassy, rather heavy, some sweetness. Finishes lightly sweet and lightly sour with notes of flowers, honey and earthy notes. nice stuff, rather heavy, which is not untypical for Muscat ottonel.
