Bière des Champs is inspired by the beers brewed on the farms of rural Belgium to nourish field workers during hot summer months.
We took a grist bill consisting of Belgian pilsner malt, flaked wheat, and malted spelt and fermented it with a very unique blend of yeast.
The addition of generous amounts of hops from the Alsace region of France gives the beer a grassy quality. Just prior to bottling we added our farmhouse Brettanomyces strain to produce carbonation and a unique rustic character.
Aged for 03 months.

Bottle from Mikkeller Shop, Odense. Cloudy golden with a big and lasting white head. Fruity, spicy and funky aroma with peach and pineapple, cardemum, coriander and cinnamon, and funky grapefruit and leather. Juicy fruity flavour with a nice funky touch, and a rather bitter finish. The funky character is up there with the masters at Jolly Pumpkin and Anchorage

Nicely dry & funky. Very rustic with pumpernickel, hay, leather, pepper corns & tons of dusty barnyard brett. Bit high on the bitterness. Very good brett saison but I’m partial to fruitier brett strains. --- Beer merged from original tick of Bière des Champs Blend 1 on 27 Jan 2021 at 10:05

Nice slightly bubbly-creamy mediumlasting head, hazy. Aroma is slightly dry sour-ish floral, weeds, oak, hay, minerals, yeast, sour grass, sawdust, paper, bark, light malts. Taste is slightly dry sour-ish floral, weeds, hay, yeast, oak, bark, sour grass, minerals, paper, flowers. Medium to longlasting bitterness, slightly harsh sour-ish floral mouthfeel. Fair enough.

Tap@Mikkeller Baghaven, Copenhagen - Orange coloured pour with white head. Medium tart fruity with notes of apricot, some light citrus fruity notes, bretty, yeasty, medium body, fruity with delicate floral accents into the brett laden drying finish.
