A collaboration between Steven and Sam.
The saison was created by Steven and was brewed in 2021. Came out under the name Down Under in a small batch. The rest was taken to the cellar.
The saison was on a wine barrel for 9 months,later shortly on a maple syrup barrel. We blended this beer then with a selected Bofkont barrel. Finally it's ready to come out..Meet the barrel aged saison blended with lambic.

Hazy golden iwth a white head - Tart wood aroma - Malt body with a tart wood flavour - The tart wood flavours goes into the finish - This was good

Bottle, 750 ml at Grote Dorst. Cloudy golden with white head. Bit funky, some cellar notes, nice soft sourness, bit vinous.

Bottle @MBCC2023, Yellow Session. Murky, grey orange, tiny head. Peach, vanilla aroma. Sourish flavour, peachy sweetness. Quite fruity with some dry and sweet solvent in the finish.

Pours clear, darker blonde. No real head. Scent is full, lamboc funk, saison phenols. Taste is sharp, tart, dry, mild lambic funk. Mild saison phenols. Thirst quenchening and refreshing beer.

Taster from 0,75l bottle at Hops 'n More, Leuven. yellow cloudy color, small white head. smells funky, grassy, earthy, light dill, spices. Nice smell. full body, soft carbonation. tastes earthy, grassy, wood, some maple, light chocolate. finishes lightly dry and light to medium sour with notes of maple, wood and spices. Rather decent, but not totally my thing, a bit weird

Bottle, taster @MBCC 2023, Copenhagen (Denmark). 05/05/2023. [#6.256 Global - #258 Belgium - #1 De Circus Brouwerij (My Belgian Brewery #102)] Pours orange with a lacing white head. Aroma: plums, funk and wood. Taste: funk pear, wood barrels and wild yeast. Lovely acidic mouthfeel Next one please!
