So, for 2021 where are we? We are back to Dabinett heavy in the blend, making up 75%, with Bisquet the remaining quarter. So after Raison 2020, expect a bigger, bolder flavour. Then the key difference is we had to source different barrels in 2021, meaning that this vintage is the first not fermented at all in old Scottish barrels, instead we have used ex-Irish barrels. So to match those bold Dabinett tannins, instead of complementary smoke, we have glorious fruit, really letting the apples tell their story.

Panda thanks to Danlo: Poured a coppery golden with a white bubble head. Aroma is apple, leathery, herbal. Taste is tangy, apple, leathery, tannis, woodsy.

750ml bottle from Ross on Wye. Golden colour, no head and aroma of apple, wood, leather, funky Taste is sweetish, tangy, apple, fruity, with wood barrel notes, mellow funk, and drying bittersweet spicy earthy tannins. Medium bodied, low carbonation, dry tannic finish. Nicely balanced, very drinkable.

On tap at Toms Tap, Crewe. Pours a golden yellow, with low carbonation. The aroma is mainly whiskey with some underlying general apples and juice. In the mouth it is soft juicy pulped apples that come through immediately. Alcohol is there too, along with apple peel and traces of citrus and ginger. It starts off sweet, but becomes progressively drier, ending up with a very dry (and boozy) finish. This is excellent ! What a dry cider should really be like.
