The starer, the wood-cat,
the purblind, the furze cat,
the skulker, the bleary-eyed,
the wall-eyed, the glance-aside
and also the hedge-springer.
In folklore, Hares have often been associated with the transition from Summer into Autumn, bathed in silver light from the harvest moon, leaping forward to greet the new season.
At a time of the year when most creatures are readying themselves for the slumber of Winter, the cidermaker is doing quite the opposite. Apple season begins with the last of the Summer warmth and for us, will continue until the last apple is gathered by hand and pressed at around Christmas, by which time our limbs will be as heavy as the sacks of apples we’ve just spent the last three months filling!
This is a small batch mid season blend of fruit from three different, but equally beautiful old orchards in the Golden Valley. Dry with lemony acidity and silky tannins with a note of leather and cedar wood on the finish, pair this with spiced lamb or autumnal veg dishes.
Dry, perlant, unfiltered, unpasteurised, wild fermented, pure juice, natural cider

750ml bottle from Cat in the Glass. 2021 Vintage. Orange golden colour, no head and aroma of apple, funk. Taste is sweetish, tart, apple, woody, fruity, orchardy, funky, leather, with some drying earthy tannins. Medium bodied, low carbonation, dry funky tannic finish. Nicely drinkable.
