Silver medail Polish Craft 2019 in BA stout/porter category!. For the base we used imperial stout with 30blg plato, which we decided to age in bourbon barrels for over 9 months. Then later on we added espresso coffee mix from Honduras, Colombia and Brasil. We decided to celebrate our 2nd birthday with a serious monster – 14%abv and 30blg. Despite it’s heaviness and serious alcohol level, it’s really balanced and full thanks to the barrels which worked magic, giving this beer really complex character.

Bourbon barrel aged coffee stout made for the second anniversary of this Polish craft brewer, thanks to Steve for sharing. No head whatsoever, save for some small, loose, beige bubbles that dissolve quickly; very dark chocolate brown robe, near black. Aroma of caramel sauce, thyme, toffee, soy sauce, walnut oil, old coffee grounds and coffee filters, bayleaf, reduced game sauce, candi sugar, bourbon, beef broth. Sweet onset, yellow raisins, candied dates, fig, outspoken beefy umami effect, soft carb (almost flat, in fact - see also the lack of head), syrupy and supple body; hazel- and walnutty main stage with a strong caramelly underbuilt, leading to more bitter 'chocolateness' and eventually indeed a coffee effect, but in a somewhat dull, 'old' way, as in black coffee that has been standing in a coffee pot for a few days. Woodiness remains light, bourbon on the other hand is quite apparent, as a warming, bittersweet glow in the finish, moving the malty caramel, lingering sugar and bitter old coffee grounds effects onwards, adorned by thyme- and bayleaf-like herbal notes. Vague hints of black pepper and vanilla briefly appear as well before the beer fades away. Sweet for the style - which I guess is quite 'modern' these days but not my preferred profile for an imperial stout, in fact almost quadrupel-ish, with interesting aromatic aspects but a tad too strong on the beef stock-like umami factor for me. Enjoyable enough as a 'bière de dégustation', but then Rockmill still fails to blow me off my socks compared with some of the other high profile Polish craft brewers, I'm afraid.

Butelka 330ml (BB 31.05.2021). Czekolada, wanilia od beczki, stonowane ale wyraźne, świetny balans między słodyczą a nutą alkoholu, gładkie, nisko nasycone, bardzo smaczne.
