Nouvelle cristallisation de notre amitié avec le domaine Lissner, nous avons cette fois exploré un peu plus l'assemblage de différentes bière.
Il s'agit d'un assemblage de bière acidulée (1 an) vieillie en barriques de vin rouge, de saison aux bretts (2 ans), avec une touche de jeune lambic Cantillon (10%). Cet assemblage a macéré 2 mois sur des marcs de Pinot Noir de notre ami Théo, avant d'être embouteillée pour une nouvelle maturation en bouteilles de 75cl durant 3 mois.

Bottle thanks to Grant. Pours a hazy orange with no head. The aroma is funk, wood, grape skin. Slick body, sweet grape, light funk, wood, light finish, enjoyed this.

Sour ale blended with a 'wild ale' (that is to say, a 'Bretted' saison), aged on red wine pomace from Lissner, an Alsace winery; thanks to tderoeck for sharing. Some loose, off-white bubbles here and there around the edge but otherwise no foam; clear pale salmon pink robe wth rosy glow, looking somewhat like rosé wine. Aroma of cranberries, sour grapes, dry rosé wine, passionfruit, red wine must, apple peel, oak wood, hints of orange, dry earth and cooked beef. Tart but very fruity onset, sour grapes and red plums with hints of cranberry and red apple, near to flat carbonation with vinous mouthfeel; drying lactic and fruity sourness through a sweeter malt base and lovely vanilla-scenting oak wood, carrying all that fruitiness to a bright, vinous, elegant finish, in which a touch of meaty proteins add further body and complexity without disrupting the play of sourness, fruitiness and woodiness. The Brett effect remains very subtle here but never mind: Ermitage once again demonstrates its skills and proves that nearby Cantillon is not the only brewery that can extract the full potential out of a pomace and despite not using whole grapes, create an utterly fruity, colourfully juicy sour beer with it. A gem, very well done.

Clear very pale pink beer, practically no head. Aroma: funky, a little dirty, cheesy, sweaty feet, red grapes, some tannins, sweet touch, a bit yeasty, red berries, some raspberries. MF: soft carbon, medium to light body. Taste: a bit earthy, pretty acidic, red wine, a little bitter, sweet touch, pretty fruity. Aftertaste: raspberry jam, strawberry jam, a bit funky, nice one!

Vesine, hapukas, alkone, viinamrjane, nisune, nats happeline. Lambikut otseselt ei tuvasta, kuigi nats funky on. Ok joogikas.
