Perpetua sour coolship beer from 100% spontaneous fermentations, aged 1 month on foraged juniper berries and a bunch of Tuscan grapefruit zests. Ka is our perpetua: worts from different coolship are added to the perpetua (a kind of solera) one after another, and spontaneously fermented thank to the resident microflora. raw materials: local organic barley malt, local organic wheats of evolutionary populations, aged hops, local juniper and grapefruit. no sour pitch, nor yeast, nor brett, nor bacteria were added.

Small white rim over fully hazy yellow-golden beer. Lactic & other acids, bit horseblanket, floral (marigold, lilly,...),,lemon, blossoms. In the taste, the juniper berries abound, with moldy wood. Again lemon, lacitic acid, resin, shoepolish. Warming up, a flavour as from buckthorn. Acidburn and -thinning, medium carbonation, almost refreshing. Very original, almost unsettling beer. Impressive, anyway.

(Draught at Billie's Bier Kafétaria, Antwerpen, 19 Oct 2023) Golden colour, slightly hazy, with frothy white head. Fruity nose with notes of lemon, grapefruit and peaches. Fruity, tart taste with citrus, lemon, grapes, green apples, oak wood and a dry and tart finish. No bitterness. Medium body, dry. Fresh, tart and tasty. Very nice.

Bottle pours at the brewery. Hazy golden with medium white head. Fruity, citrus, herbal, zesty. Medium sourness. somewhat thin in finish.
