Silhouet is a special blend of different wild ales aged for 2 to 5 years in oak barrels, and a rustic saison. The outcome is a beautifully balanced wild ale which marries the complexity of aged, characterful wild ales with fresh and aromatic qualities of a saison.
Silhouet pours a dark orange color with lively carbonation, resulting in a big, frothy white head. In the aroma, you will find notes of poached peaches, brioche, black pepper, a hint of fragrant strawberries, as well as some hay and funk. In terms of taste, spicy notes along with the presence of peaches and lemon, work harmoniously with a gentle sourness and bitterness. The wild yeast characteristics like cherry pie and hints of tropical fruits like pineapple and mango beautifully complement the fresh and floral saison. To create Silhouet we used a generous amount of 5-year-aged Hallertau Mittelfrüh hops, resulting in a wonderfully dry and slightly earthy finish. The wild ales, aged for 2 to 5 years in oak puncheons, become beautifully integrated in the beer, imparting oxidized notes reminiscent of sherry wine like subtle hints of honey, vanilla, and walnuts.
This beer is very suitable for longer ageing. The rustic saison qualities will marriage even more with the matured beer. What’s interesting to notice is how the wild yeast will transform those flavours over time in the bottle. When drinking fresh, we recommend to let the beer open up in the glass.

Geprobeerd met LiekevdV op feest bij Keukeman. Het is een troebel oranje bruin bier met een volle beige schuim. Het heeft een firs zuur aroma met tonen van hout. De smaak is fruitig, fris zuur, wrang en wat citrus achtig.

Bottle. Color: Lightly hazy orange, large frothy white head. Aroma: Fruity, some tartness, subtle funky and spicy hints. Taste: Malty, peppery notes, fruity peach and hints of citrus, subtle rural funk, oak wood, hay, old hop, vanilla and oxydation. Minerally, dry finish. Light to moderate tart and sweet, light bitterness. Indeed a blend of Saison and Wild Ale. Medium body, below average carbonation. Very well balanced. Nice complexity.

Blend of a top-fermented saison with strains of 'wild' (Brett) ales by Dutch craft superstar Tommie Sjef, a very talented young fellow more often showing moments of genius than not. Birthday present from Hinke shared with Goedele - big cheers for this beautiful bottle Hinke! Snow white, foamy, very thick and dense, membrane-lacing head on a hazy orangey peach blonde beer with amberish glow. Aroma of strong old dry oak wood, dry peach kernels, cracked old leather, young mugwort leaf, dried orange peel, hay, tonic water, grapefruit zest, dried thyme, jute ropes, soggy toast, amaro, old dry cigarette shag, lemon pith. Crisp onset, dry from the start, with hints of dried persimmon, crabapple and orange pith but generally quite low in esters for this kind of beer; deeply drying lactic tartness thoroughly plowing through a smooth-edged, bread-crusty, beech-nutty and somewhat grainy cracker-like malt structure, softishly carbonated. Slight toastiness towards the finish, but overruled by the lactic sourness, leathery Brett effects and very pronounced tannic woodiness, even a bit astringently so, further deeping the overall dryness of this beer. Aspects of wormwood and thyme pass by briefly at this stage too, while a deeply situated hop bitter element again accentuates the dryness. Beginning dry, ending very tannic and even more dry, so not quite as refreshing as the 'saison' element would suggest, but never mind that: this is a very Brett-forward, bone dry wild ale in which all the flavours are held together very well. Enjoyed it a lot, even if the elaborate description of the aroma above does not correspond at all with what I tasted...
