Dysania II is our evolving solera cider. We barrel aged it in a ruby port barrel for six months. The complex acidity has been rounded off by the barrel and allowed the cider to develop a more interesting characteristics.

750ml bottle from Old Shoe Bar, Sheffield. Hazed golden colour, some short-lived bubbles on top and aroma of apple, fruity, funk, barrel. Taste is tangy, tart, apple, fruity, with wood barrel & sharp acetic funky notes, along with some citric acidity and tannins. Medium bodied, low carbonation, dry tart and tannic finish. Nicely drinkable.
