2021 was our first time working with Balls Bittersweet, an unusual Herefordshire variety descended from Medaille d'Or and our old friend Foxwhelp. Coming from the rolling hills of West Herefordshire, they produce a beautiful, naturally balanced cider, with great depth and good acids.

Wild fermented, this spent some time in second- and third-use ex-cognac barrels before bottle conditioning for a gentle, creamy bit of sparkle in the glass.

Reminiscent of Yarlington Mill in both colour and phenolic profile, this is somewhat less rustic but no less characterful. The palate is full of juicy sappy apples, tangerine, incense and citrus oil, with notes of leather and sweet spice, plus soft tannins to finish.

750ml bottle from Little Pomona. Hazy deep orangey gold colour, off-white foam head and aroma of apple, wood barrel, funky. Taste is tangy, tart, wood, oak, apple, fleshy, with some farmhouse funk and drying tannins. Medium bodied, light foamy carbonation, dry woody tannic finish. Nicely drinkable.
