For our Maturation series, we select beers aged in a single type of barrel to showcase how different casks affect the final character of a beer. We aged our Danish Wild Ale in a large, very old Oloroso Sherry Bocoy cask made of chestnut wood for two years, and blended this with a smaller amount of two-year-old Danish Wild Ale aged in a traditional oak Oloroso barrel. The Oloroso casks enhanced the beer with flavors of toasted walnuts, caramelized fruit and spices.

75 cl bottle. Pours cloudy yellow, white head. Aroma is earthy and sour fruity. Sweet, deep fruity. Subdued sour and dry. Sour and fruity far finish.

Bottled. A cloudy dark golden beer with a lazing beige head. The aroma has notes of lemons, brett, apricot, and straw. The flavor is sour with notes of lemons, brett, apricot, and straw, leading to a tart finish. 8/3/8/3/16

Jens Smagning 26/02/2026 - funky and lightly tart fruity with pleasing notes of orchard fruit, getting the sherry washed barrel accents, medium body and acidity, some herbal spice, tart delicate sherry infused lingering finish. Lovely.

Bottled . yellow cloudy color, small white head. smells sherry, horse radish, earthy, very nice smell. full body, soft carbonation. tastes sherry, earthy, wood, spices, tannins, resin, old wood. finishes lightly dry and lightly sour with notes of old wood, sherry and oxidation notes. Very nice one, almost a tad too heavy on the wood. Very nice one

Huge funky nose right when opened but it disappeared quickly, nose of nutty oak and pine needles, flavor is light barn and farminess, juniper and black pepper. Delish! Wish it was more flavor packed but still super interesting and crisp tastiness.

Bottle shared. Almost clear dark golden. Lots of dry Sherry, walnuts, oak, quite herbal, dry cellar notes quite like Boon lambic, minerals, dry dusty herbs, grape skins. A ton of dry Sherry. Medium sour, light sweet and bitter. Full bodiedz quite dry. Really good.

Bottle @ Ratebeer Odense, January twenty four. Pours Unclear amber with a White head. Funk and Wood. Heavy on maple, walnut - sherry oloroso. Grapes dry and slight bitter finish.

Ratebeer Odense First tasting of the year 2024. Hazy golden with a lasting white head. Aroma of funk, walnut, wood and a touch of vinegar. Dry and tart fruity and funky flavour with green walnuts and Bitter grapefruit
