Seedling is a mixed fermentation ale brewed with barley, wheat and oats, and aged several months in used red wine barrels with a mixed culture containing Brettanomyces and Lactobacillus. For this version, we infused the finished beer with Elderflowers hand-picked from the grounds surrounding the brewery. Seedling is dry, refreshing, and delicately tart, with bright notes of citrus, ripe stone fruit and wood that blend with flowery notes of Elderflower and the earthy notes given by the flowers’ stems. The relatively low alcohol content and soft, inviting mouthfeel make this simple but graceful beer wonderfully drinkable.

Tap at Prague Beer Fest 2024. Hazy golden body, white head. Brett-driven aroma with distinct elder notes. Minerally, bretty, fresh taste, lightly citric, some elderflower, very well integrated. As Gurthnar says, a nice easy drinking beer, very well made, huge props for that! Definitely one of my faves of the fest!

Tap at Prague Beer Festival. Nice easy drinking beer, rather thin,with a bit of sourness, moderate elderflower.
