Our Infinite Improbability Saison is a winter saison, brewed in the depths of the British winter with British hops and malt, and Belgian belle saison yeast. This annual favourite is typical of the farmhouse style – rough and ready, with slight peppery and citrus notes delivered by the yeast. Read more about Infinite Improbability and the saison style in our blog post about it.

Tap. Cloudy, orange golden colour with small, frothy, half-way lasting, minimally lacing, white head. Minimally bready, grainy and spicy malty aroma, a tangy touch, fruity yeasty overtones, slightly vinous fruitiness, mild funk, whiffs of glue, caraway spiciness. Taste is tart-ish, yeasty fruity and slightly spicy, bready, grainy malty, some gooseberry, unspecific fruitiness overall, moderately bitter hoppy counterpart, citric tartness. Watery texture, dry palate, medium, mildly prickly carbonation. Okay basic beer, needs a little upgrade to become round - OK.

1/3 pint, gravicask shared with Finn at GBBF Winter '23. Close-to-clear golden body, dotted spots on the glass, filmy layer. Yeasty fruitiness on the nose, spiced. Spiced citrus flavours, together with a farmyard twist. Rounded yeasty fruitiness to the ending, mid-dry. Fine depth. Pleasing to a certain degree. (Burton upon Trent 16.02.2023).

Cask at the great British winter beer festival. A light hazed golden orange coloured pour with a halo of white head. Aroma is earthy Bubblegum saison, straw. Flavour is composed of semi sweet, light tang clove, Belgium yeast, bubble. Little flabby. Palate is semi sweet, light grains moderate carbonation. Decent.

Gravity cask at the 31st Ealing Beer Festival, Walpole Park, 15/07/22. Almost clear golden blonde with a good sized white head. Nose is tangy fruits, herb, grains, yeast esters, straw. Taste comprises yeast esters, light white peppery spice, soured lemon, straw, light barnyard strokes. Medium bodied, soft carbonation, semi drying close with a tarte edge. Decent saison for cask.

From cask at The Dog & Bell in Deptford, London, 25.02.22. Cloudy straw colour. Diminishing white head. Aroma and taste of herbs, sweet pale malt, dried fruits and some sourness. Not great. Actually, not very good at all, with too much overripe yellow apples and overripe bananas. Very fruity.
