We finally went and brewed a dark version of our fan favorite Stonewall Apiary-infused honey Kölsch, Sleepy Bee, and boy are we glad taht we did! Not too much has changed here, despite the color - same processes, along with the Köln malts, noble hops and classic cold-fermenting ale yeast that make Sleepy Bee the staple that it is, but with a touch of crystal and de-bittered malts for color and a slightly richer flavor. With notes of freshly baked brown bread, toffee biscuit and coffee with honey, this might just be our new favorite cold weather beer.

16 oz can. Side-by-side comparison with “ Sleepy Bee “. Never in my entire life have I seen a black Kolsch bier!! German brewers would have a heart attack if they saw this. Aroma is roasted grain, hints of chocolate malts. Flavor has a very mild honey like malt that plays with the roasted mall, showing chocolate in mild coffee hence. I don’t know in a way it’s almost like a dry stout with notes of honey.

Pours black, dark brown with a fine-bubbled tan head. Aroma of toasted malt. Taste has dry stout malt notes, some toasted grain, heavier body than normally associated with the style. Palate has lingering oily grain, some mellifluous elements. Interesting!

16oz can from Tavour. Near black pour, nice thick beige head. Roasty aroma and taste recalls more of a schwarzbier character. Light roasty bitterness at the finish.

16oz can pours out dark brown almost black topped with a tan head. Nose is nice light roast malts some coffee ash touch and some nuts. Taste is more of the nice light roast malts some ash and some grain.
