Seasonal ale aged on our own shoyu kasu (soy sauce lees) made with foraged saffron milkcap mushrooms, organic barley and wheat, hopped with NSW grown Fuggles and fermented with our mixed house culture wholly collected from native flowers in NSW.

Light purple amber color. Big Japanese plum (ume) salty nose with cherry blossom yeast (sakura mochi). Very tart. Low carbonation very dry and unique. Lingering ume with a touch of mushroom character Wow. I like this.

[8/24] Bottle. Pretty clear amber with an off white head that fades fast. Aroma of crusty bread, wintery oranges, lightly earthy funk, hard spices. Light bodied, spritzy. Sour but also has some breadcrust sweetness, marmalade oranges and a bitter spicy finish. There's a savouriness to it all but I would have guessed neither mushrooms nor soy sauce lees. The sourness seems persistent yet creamy. [7.5]
[12/25] Clear reddish amber, pale beige head soon at the rim. Aroma of sour plums, light bread, the forest floor, dried whole oranges. Dry and gently sour with crusty bread, dried fruit and long sourish citrus. Funky, elegant, improving. [7.9]
