#024 - In September 2021, we went to the Champagne region where we picked up freshly pressed Chardonnay pomace. We added the pressed skins for 6 days to a barrel aged saison/lambiek blend. We let this blend age for 5 months on amphora.

0,75l bottle at home. yellow hazy color, small white head. smells funky, grapes, parfumy, tannins, bit lactic, very nice smell. full body, soft carbonation. tastes peppery, lactic, bit earthy, bit vegetal, light minerals ... later on a lot more grape forward. finishes dry and lightly sour with notes of pepper, earthy and light minerals. not that excited by the taste, smell was really nice. overall decent ... this gets a lot better once it opens up a bit.

Bottle shared with Seth breaker at Beer Merchants Tap - Hackney. Pours clear pale yellow with a slight, foamy white head that settles into a cream. Light-medium sweet flavour, salty, restrained acidity, some white wine, tangerine, lemon, subtle pale wood, slight poop and funk. Medium bodied with delicate carbonation. Tart finish, reasonably quenching, lemony bite, salty bite. Very nice.
