【名前の由来】
日当たりの良い広大な平野に、見渡す限りの緑。数メートルの高さまでホップのツタが伸び、無数の房をつける豊かな風景にニュージーランドのワインの産地、ネルソンで出会いました。ミネラルを豊富に含む大地で育ったホップ、ネルソンソーヴィンは、白ワインを感じさせる上品な芳香を持つことで知られます。土地の味、テロワールの醍醐味をそのまま閉じ込めたようなネルソンソーヴィンホップ特集シリーズ、豊醸。

【醸造家の声】
ネルソンソーヴィンという極上のホップにフォーカスした豊醸の第一弾では、シンプルな組み合わせが生む美味しさをテーマにしました。ベルジャンペールエールとモダンなホップの組み合わせは、美しいほどに相性が良く、多くの人が自然と手を伸ばしてしまうような最高に美味しいビールになります。ベルジャン酵母からくる柔らかでフルーティーなエステル香と、ほどよく甘みのあるモルトキャラクターが、モダンホップのトロピカルで柑橘っぽいフレーバーと合わさることで、ほぼ完璧と言えるような相乗効果をもった組み合わせになると言えるでしょう。

まずモルトは、ピルスナーモルトをベースに、ウィーン、ミュンヘン、ハニーモルトをブレンドして、少しオレンジ色がかった、ほろ甘いビスケットのような味わいに設計しています。そこに京都醸造のハウスイーストであるベルジャン酵母で発酵させ、その過程で生み出される多彩なフルーツのような芳香を引き出しています。仕上げに、ニュージーランド産のネルソン・ソーヴィンホップをたっぷり使用し、トロピカル、ベリー、フローラルの素晴らしいバランスをビールにもたらし、酵母とモルトの調和を促します。そして、驚くほど深みのある味わいのペールエールに仕上がりました。この成功を受け、今後もぜひ新しいホップを用いてのペールエールに挑戦していきたいと思っています。

[Naming]
The word "Hojo", when using the regular kanji, means abundance. We used close kanji, but the second us the one used in the word "brewing", and so is a play on words, evoking images of the plenty of fertile farmland, and the character of the terroir that has made New Zealand one of the most revered hop growing regions in the world. Nelson Sauvin is one of the country's most popular hops now, with grape and stonefruit nuances normally associated with white wine, and so this idea of terroir seemed even more apt.

[Brewer's Voice]
To me, Belgian Pale ales and new world hops are a beautiful pairing that just makes sense. The soft fruity yeast esters and the semi-sweet malt character mixed with tropical citrus flavors is a winning combination in my book. For this beer we kept it simple and did just that! Pilsner malt base and a mix of Vienna, Munich, and Honey malt make up the base for this beer giving it a touch of orange color and a semi-sweet biscuit like malt profile. This beer was fermented with our Belgian house yeast to impart a nice variety of fruit esters from fermentation and to round it all off is a healthy dose of Nelson Hops. This is our first beer utilizing our newly selected Nelson Sauvin hops from New Zealand. These hops impart a wonderful mix of tropical, berry, and floral character that blends seamlessly with the Yeast and malt to give you a surprisingly impactful pale ale with a depth of flavor. This is a style I will definitely be revisiting with many more new hops to come.
