Super Soak: our Soak series amped up with a bigger malt bill, increased ABV, and twice the amount of fruit as Soak. While still sour, the higher ABV in Super Soak serves to moderate the lactic acid formation.
We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the foeders to “soak” for a deep extraction of unique colors, aromatics, and flavors and a refermentation.
Blueberries lend a tart, rich flavor profile, and a deep plum purple hue. The nose teases with aromas of blueberry cobbler, berries, and hints of baking spice. Moderate to heavy acidity is backed up with sweetness from the blueberries and a subtle earthy undertone.

HOPS: US Goldings
MALT: Pilsner, White Wheat, Flaked Wheat

Bottle drunk 12/1/17 and on draught at VeeVee, 2/8/18.
Rating is for the draught version, as the young bottle was going through a refermentation and was still way too young. Though given PhillyCraft's review below, it looks like some bottles may still be off.
Looks like a glass of blueberry puree, kind of surprising how cloudy it is. Bright crimson hues throughout and no head whatsoever. Keg must not have settled yet.
The nose is heavy with skin and pulp, which is a good thing. Nicely macerated and attenuated fruit character is met by strong black pepper (seed) and light vegetal notes. No alcohol and no sign of the diacetyl that was in the young bottle. Pretty low on oak, which is odd for this series.
In the mouth it's dry, soft and malty with good tannin from fruit and barrel. Some of the entries in the series have a bit too much malt sugar and light wood sharpness. Not sure if the particulate in solution helped allay this, but not so here. Lightly juicy, tart and with tons of fruit complexity. Lingering acidity and soft tannins with no alcohol or flaw. My only complaint is that it's rather low on beer character; being quite given to the fruit. But it's hard to be too upset when said fruit character is done as well as it is here. With warming breathing, light acetic acid and moderate lactic acidity come more in to focus.

Bottle pours out purple color topped with a fizzy pink head. Nose is nice blueberry some stone fruit notes sour tart oak barrel notes. Taste is more of the nice tart berries some peach notes and oak barrel.

Pours deep slightly hazed maroon into a tulip. Pink head quickly recedes to nothing. Blueberry lacto aromas. Sharp lemon and blueberry upfront turning to a funky lacto finish.
