Super Soak: our Soak series amped up with a bigger malt bill, increased ABV, and twice the amount of fruit as Soak. While still sour, the higher ABV in Super Soak serves to moderate the lactic acid formation.

We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the foeders to “soak” for a deep extraction of unique colors, aromatics, and flavors and a refermentation.

Blueberries lend a tart, rich flavor profile, and a deep plum purple hue. The nose teases with aromas of blueberry cobbler, berries, and hints of baking spice. Moderate to heavy acidity is backed up with sweetness from the blueberries and a subtle earthy undertone.

Bottle. Pours hazy purple, small pinkish purple head, decent lacing. Aroma is woody funk with berries. Walking through a forest after a rain. Fructe de Padure. Flavor is light plus tart, light funk, nice berry, actually trending to blueberry, which in my experience is rare -- ie I cannot usually detect blueberry in a blueberry sour. Here, I can. Noice. Medium body. As a point of reference, my wife, who likes red beers was a huge fan of this one, to the point that, when I emptied a partially full glass in the sink later in the evening (MY glass, I swear), she was pissed at me for the entire night, and even brought it up the next day. Whoa.

Tasting at Matt's, bottle
Dull purple/amber colour. The aroma, just sour fruit. Berry flavour, extremely sour, some wood.
I have little interest in digging reediming qualities in these beers, just grossly unbalanced.

750mL bottle, pours a cloudy dark pink with a small off-white head. Aroma reveals mixed yeast, plenty of tart blueberries, and a bit of oak. Flavour is quite acidic, with intense sour blueberries, moderate wild yeast, and a touch of oak. The blueberry character is very nice, albeit on the very acidic side. Not overly complex, but it's quite pleasant despite the acidity. Underwhelming for Trillium.

750ml at Matt's amenity room. Appearance: hazy copper with a white head. Aroma: acidity, sour blueberries, some barrel. Taste: oh... my...god...this is sooooo sour. Overall: oh boy, this is like an acid explosion.

Dirty reddish orange with a decent white head. Soured fruit, nondescript but red maybe. Blueberry and sour notes that distracts from the fruit.

Pale purple and slight haze. The aroma has a nice blueberry note, some cinnamon, maybe a bit of wildness. It's fairly tart, lots of blueberry, but a hint of barrel. I like the fruit character, but that seems pretty normal for American sours - nice fruity character but a fairly sharp acidity.

Pours clear reddish. Small ring of white foam. Smell is full, dry, bit phenolic. Fruity, oaky. Taste is dry, tart (rather intense on the dry tartness, lemon sourness ). Fruity, medium body. Rather high carbo. Sour backbone.

Pale Purple pink color. Light oak nice blueberries but they don’t shine amazingly - still solid. Super sour giving me heart burn that just dominates too much and the fruit character is a bit lost the oak is decent.

Taster showing dark blueberry blue with sparse white foam. The nose shows moderately intense notes of tart blueberry. The palate is light bodied and well carbonated. Highly tart with intense acidity and very forward blueberry throughout. More blueberries on the end. Apart from the mildly overwhelming tartness, it's very good.

From a 330 ml bottle at the RB DC tasting. Pours a clear rose with a pink head. Aromas of blueberry. Flavors are sour berries.
