Super Soak: our Soak series amped up with a bigger malt bill, increased ABV, and twice the amount of fruit as Soak. While still sour, the higher ABV in Super Soak serves to moderate the lactic acid formation.
We ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the foeders to “soak” for a deep extraction of unique colors, aromatics, and flavors and a refermentation.
Blueberries lend a tart, rich flavor profile, and a deep plum purple hue. The nose teases with aromas of blueberry cobbler, berries, and hints of baking spice. Moderate to heavy acidity is backed up with sweetness from the blueberries and a subtle earthy undertone.

HOPS: US Goldings
MALT: Pilsner, White Wheat, Flaked Wheat

(750ml bottle @ Nische's tasting, shared by the host, thanks!) Pours murky reddish with a small white head. Notes of crushed blueberries, white wine vinegar, tannins, wood, citrusy lactic acidity, past high tartness into quite sour really, with some drying from wood and berry skin tannin on the back end. Berry and vinegar bite into the aftertaste. Medium body and rather high fizzy carb. I do like the blueberry quality here, but struggle a little with the high acetic acid component typical of many American sours.

Bottle, many thanks Nische! Hazy ruby color with white head. Aroma is blueberry skin, yoghurt, marzipan. Taste is thick marzipan, tannic blueberry skin, almost puckering tartness in the finish. Velvety mouthfeel with soft carbonation. Fun!

0,66l bottle at Nisches tasting, thanks for sharing. BB 03.10.2017. purple cloudy color, small pink head. smells of funk, marzipan, earthy, nutty, some blueberries, baby diapers. nice smell. medium to full body, sofft carbonation, slick mouthfeel. tastes of blueberries, marzipan, nutty, earthy, spices, peppery, grassy, lactic. finishes rather dry and medium sour with notes of blueberries, marzipan and nutty. quite nice one, nice fruit notes, a bit on the acidic side.

750 ml. bottle sampled @ Trillium tasting. Red hued amber, off-white head on the sides. Nose is acidic vinegar blueberry skins & more red grape skins with low spearmint? Taste is vinegar, strange, red grape vinegar skins, low oxidation, puckering, more red grape skins than blueberry and a strange low mint finish. Bit thinner, almost tannic & low oxidation.

750 ml bottle. The color looks nice, a deep purple with a little white head. The aroma is ok, mild berries and some oak. The flavor leaves a lot to be desired. It wants to be blueberry but it shows A LOT of vinegar. Mildly sharp... sour oak. The large amount of vinegar ruins the experience. Not my jam at all.

Draft at Beer Temple, Carnivale Brettanomyces ‘18. Hazy red amber with a ring tan head. Aroma of vinegar, tart red berries, lactic notes and citrus. Flavour is light to moderate sweet and heavy sour. Medium bodied with soft carbonation.
