This summer we used elderflower in a Saison - and it was a revelation! The floral aroma, and the way the subtle hedgerow notes matched with spicy yeast, seemed perfect for a dry Saison. Elderberries have some of the same qualities toned down and with the interesting addition of a powerful dark fruit and slightly bitter flavour. The berries slowly infused their flavour over several months in the barrel; they also give the beer its amazing purple colour.

keg at the hanging bat... deep red.. thin white lacing lacing... Soft dry red wine.. soft berries fruit nose.. Light berries.. soft woody berries.. Light tartness.. Lightest funk.. soft sweet fruits.. with a little bacterial buggu edge

Keg at the hanging bat. Pours deep ruby, nose is herbal, burnt toffee, caramel, funk, taste is juicy fruit, floral, chewy toffee, winey.

Bottle from Hopology, Nottingham. Clear purple colour no head. Aroma has big berries, and light yeast. Taste dry more than sour. light body with low carbonation.

330ml bottle at home sourced online from Beautiful Beers, Bury St Edmunds. Pours vibrant purple with no head whatsoever. Aroma: tart red fruit, light acidity. Taste: light to moderate tart, fruity sour elderberries with a long duration, red wine tannins, hint of funk. Light body, zero carb. Dry finish. Not a bad effort but no saison influences that I could discern.
