Rob Stockley can't claim many vintages under his belt so far in his cider making career but with the guidance and experience from working with the good folks at Wilding, his 2022 bottle releases are proving to be truly exciting and a new maker to watch out for.
A sweet, sparkling tannic cider with notes of bruised apple and toffee.
Made with the cider varieties Dabinett, Ashton Brown Jersey, Yarlington Mill, Harry Masters Jersey, Michelin, Chisel Jersey and Browns. Apples handpicked from traditional, unsprayed Somerset orchards. Whole juice, 24 hour maceration, wild yeast, and cold racked to retain natural sweetness. Disgorged by hand. Alc 5.3% vol.

750ml bottle pour at Edinburgh Cider Salon, Montrose restaurant 01Dec2024. Golden colour, bubbly white foam head and aroma of apple, fruit. Taste is sweetish, appley, keeved note, with some acidity and bittersweet tannin. Medium bodied, light carbonation, medium sweet with acidity & tannin at the finish. Nicely drinkable
