Solera series of mixed culture golden sours fermented in a large oak foeder. A portion of finished beer is drawn into a secondary vessel and replaced with unfermented wort, activating fermentation from existing microbes to produce a nearly identical copy of the original beer. In this version, beer was drawn into a fruiting vessel to age on locally grown Balaton Cherries before bottle conditioning with champagne yeast
