Mixed culture saison brewed with Pilsner malt, rye malt, and raw wheat. Blended with spontaneously fermented Roxbury Russet and Stoke Red cider. A release from our saison solera, a blend of continuously fermented saison aged in oak. Drinks like a dry sparkling wine or cider, with a depth of wild yeast character, buttery oak, and refreshing lemony acidity.

Bottle from the Philadelphia taproom: pours gold with no head. Aroma is pungent apple coder, farmhouse funk, yeasty. Taste is sweetish, light apple notes. Effervescent. Nice finish.

On tap at Pinocchio’s in Media, PA. Number one with a bullet. Clear medium gold color. No head. Earthy, yeasty malt aroma. Flavor is bready malt, sour apple and funky yeast. Dry , tangy finish.
