Mixed culture wild ale produced in collaboration with Kirk Schillinger, a dear friend of the brewery and fellow wild ale brewer. Brewed with Pilsner and raw wheat, with copious amounts of raw honey from StellaLou Farm added to primary fermentation. A long boil lightly caramelized the wort, deepening the color and adding some Maillard character to the beer. Triple pearl hops contribute a subtle bitterness and orange blossom notes. Fermented with a blend of Kirk Schillinger's house culture and our saison culture, resulting in a dry and funky ale with notes of stone-fruit, grapefruit pith, and a soft lemony acidity.

Bottle from Bottle Bar East: pours light orange with foamy white head. Aroma is herbs, light fruitiness. Lightly tart. Yeasty. Sort of funky. Overall. Pretty nice.
