Rustic ale brewed in collaboration with Second District brewing and our good friend Scott Morrison. A long, slow step mash with a simple malt bill of Belgian pils, hopped in the boil hopped with Styrian and east Kent Goldings. We sourced the yeast from a famous brewery in Tourpes, Belgium, said a little prayer and let it ferment without temperature control. The flavor is clean and dry. Aromas of lemon, pear, and earthy hops, with a distinct minerality and a balanced bitterness.
