Biere de Coupage, brewed with locally grown and malted pilsner type malt, spelt, wheat, and rye from Rabbit Hill Farms and fresh Cascade hops. A blend of young, stainless steel fermented, hop forward saison, and barrel fermented and matured Brett saison. Notes of right minerality, pear nectar, crisp apples, cracked pink peppercorn, and a clean depth of earthy spicy dandelion-ish floral character.

On tap at brewery. Yellow gold pour is topped by a large whipped cream-like white head that leaves streaked lacing. Earthy barnyard funk nose. Flavor is remarkably smooth for the style. Earthy, funky pale maltiness is balanced by soft floral fruit, white peppercorns, herbal hops and a whisp of oakiness. Outstanding!

Bottle: pours lightly hazy with a white head. Aroma is bretty, earthy, some funkiness. Taste is lightly bitter, some sweetness, earthy brett taste.
