Bughaven is an open fermented wild ale barrel aged in Amarone & Sangiovese wine barrels for 14 months!

The wort we fermented in the coolship was a simple one brewed with well water, local grain, and a blend of fresh and aged hops. The barrels we chose for aging were freshly emptied Amarone & Sangiovese wine barrels. We typically work with neutral oak, so it was fun to blend a beer with a more forward oak and vinous character. Bughaven was blended in February of 2020 and 100% naturally re-fermented in bottles and kegs.

On tap at The Beer Junction, pours a clear bright golden with a small white head. Aroma has quite intense wine barrels, gentle bugs, gentle funk, and a bit of sweat socks. Flavour is tart, buggy and mineraly – very odd – there’s tons of wine barrels, seltzer notes, some light cleaner. Hmm, this one is strange: some nice elements and not so nice.

Hazy and dullish pale, with a medium head. Buggy nose, light vinous notes. Slightly phenolic. I like the grapey character. The wildness is okay, leaning a bit ropey, though.

A lot of rustic notes, funky, some oak, a bit fruity. Taste is along the same lines, funky, farmhouse. A bit dirty-ish with some work required to perfect this one, but it's good overall for the North American farmhouse beer.

Bottle. 75cl. Split with SirAlex and Pastry Joseph. Cheers guys. Pours clear Golden with a White head. Wood, red Wine, funk and grassy hops. Thinking of early experiences of Sean Hill mastery. Dry and funky tannic red winey finish. Plenty of Wood and good drinkability.
