A high-rye Super Saison brewed with Idaho clover honey and green peppercorns, aged 8 months in rum barrels from Bardenay that once housed rye whiskey. Each barrel had a unique peppercorn addition—white, pink, or black. The final blend offers floral esters from pink peppercorns, earthen white pepper notes, spicy rye malt, and a touch of rye whiskey. It balances a black pepper punch with honey, rum richness, and musky herbal complexity from the wood and green peppercorns. A beer of elegant complexity, it’s fit for cellaring and special occasions.

On tap at HandleBar. Clear light pale golden pour thin brief off white head Soft barrel aging and caramel vanilla notes at first. Reminiscent of a whiskey. Smooth full bodied, subtle saison yeasty character, a little boozy light oak vanilla again, I don’t get much of any of the peppery spiciness. Aged veryvripe pear, luxurious palate though. Almost decedent. Delicious actually .

500ml bottle at Sockeye Alehouse. Clear golden pour, thin layer of creamy white head. Aroma is peppercorn, grassy yeasty. Taste is all about the peppercorn, snappy, spicy with a smidge of sweetness. Normal Saison notes underlie the dominant peppercorn, fruity. The savory, buying peppercorns last all the way through to the finish. Subtle strength hidden by the savory bite.
