The monthly DIPA series is our neutral, hop ready canvas to play around with all things DIPA. The goal for the series is not only to bring you at least one DIPA per month, but also to allow us to push our base DIPA recipe in any number of directions with the goal of ultimately tweaking, refining and improving every DIPA in our lineup.
For January we threw together a combination of hops we have high aspirations for Galaxy, Idaho 7, HBC 586. We find 586 particularly soft, which we think will act as a fun counter point to the normally harsher galaxy.
We taste dank pineapples smothered atop Ruby red grapefruit and mixed berries.

Opaque yellow, large white head. Pithy, dank, and bright citrus oils. Light cereals, medium bitter, very pithy, light stone fruit.

Can bought at Craft Metropolis, Penge, by my sister-in-law. Aroma has sweet stonefruit, with a berry streak, and resin. Hazy orange. Thick foamy white head. Medium-heavy bitter. Resinous. Stone fruit. Tangy berries. Underlying sweet canned pineapple. Medium bodied. Oily. Flat carbonation. Long somewhat astringent finish.
