Ridgeback staat bekend om zijn complexiteit in smaak en zijn hoge alcoholpercentage. Een hoger suikergehalte en alcoholpercentage maakt het bier zoet en het krijgt daardoor ook duidelijke tonen van karamel en Haagse Hopjes.

Barleywine by this trusted craft brewery in Breda in the southern Netherlands, can from De Pickere in Zele. Medium thick, moussy, pale greyish off-white, breaking but irregularly retaining and shred-lacing head on a misty, deep and pure copper red beer with warm amber glow, a beautiful hue for this style of beer really. Aroma of hard caramel, grapefruit peel, dried orange zest, pink peppercorns, brandy, yellow raisins, dry tea bags, pecan nuts, toast, background notes of liquorice, bayleaf and even some coffee. Clean, rounded onset, dried apricot and dried fig, not too sweet with soft carb and very full, vinous mouthfeel; pecan-nutty and hard-caramelly, bit resinous, ‘deep’ maltiness, slick but mouth-filling with a strong toasty bitterness to it, even turning a bit coffee-like in the finish (perhaps just a tad much for a barleywine). This malt bitterness is strongly accentuated by an ‘American’, grapefruity and peppery, resinous hop bitterness, remaining well-connected with this toasty bitterness; brandy-like alcohol and liquorice- and clove-like spicy accents bring further ornamentation to the finish. American style barleywine with a powerful bitter side, perhaps just a tad too toasty, but utterly solid and delicious – apart from some Molen and Kees beers, likely the best barleywine from the Netherlands I had to date. Would happily revisit.

33cl can, de et partagée avec Vincent, merci.
Ambre léger, col fin ambre, blanc-cassé.
Arôme est fin, malté pâle, caramel, avec un rétro-nasal sur un effet de noix diverses écrasées. Houblonné perce discrètement en rétro et vient accompagner ce bouquet bien malté - le tout plutôt fleuri, terreux avec un fruité sec voire noir.
Palais est fruité avec une pointe de noix de pécan caramélisée, palais est épais avec une pointe de grillé en retrait. Amertume discrète, fleurie et herbacée, le tout reste sec, petite touche de pomme caramélisée, torréfié qui perce en fin de bouche. L'amertume devient latente.

Loads of barley, though still quite bitter. A good match for this Limburger cheese, which gets stronger every day. #beerforthought

Blikje gekregen van de buurman. Donkerrood, naar zwart neigend bier met weinig schuim. Aroma van donker fruit. Smaak is zoetzuur en fruitig. Nasmaak is iets bitter en kleverig.

33 cl. can @ home, bought @ Jumbo Culemborg. Clear brown with a tan head. Dark caramel aroma with some light chocolate notes as well. Sweet taste with a light roasted quite boozy finish. Canned. Dark chestnut body, small but lasting off white head. Huge aroma of dried fruit with some caramel and alcohol. Soft, drinkable caramel-driven malty body, with dark fruits coming in from the behind, bitterish finish, despite a fair burn, balanced and drinkable.
