Ridgeback staat bekend om zijn complexiteit in smaak en zijn hoge alcoholpercentage. Een hoger suikergehalte en alcoholpercentage maakt het bier zoet en het krijgt daardoor ook duidelijke tonen van karamel en Haagse Hopjes.

Can. Dark amber pour. Aroma of raisin, figs, dates, caramelised malt and a little chocolate. Taste has bitter caramelised malt, raisin, figs, dates, chocolate, bitter herbal hop, grapefruit and a bitter boozy herbal finish. Good bitter hoppy and malty rich barley wine.

Bottle. Another long overdue review. Pours a dark brown with little head. Aroma is malty, lots of caramel, lots of grains. Spicy, figs and prunes. Big body. Flavour is malty and medium sweet, nicely restrained sweetness - I am not a fan of the over the top sweet kind of barley wine. Good bitterness and nice spice notes. Lots of caramel and prunes, fig, maybe some chocolate and molasses. Finishes medium dry, bittersweet and fruity-spicy. Excellent barley wine, not quite as refined as the BA versions.
