Orchard Ale is our exploration into spontaneous fermentation, barrel ageing and blending. We combine apple juice and pulp from our own orchard with a traditional farmhouse malt recipe, before fermenting naturally and maturing in wooden French white wine barrels. 3 years in the making, the resulting drink is complex and intriguing, with a wild, tannic and tart character, and a crisp apple finish.

Bottle. Color: Clear golden, thin white head. Aroma: Vinuous, apple and spicy notes. Taste: Yeasty, rural funk, blossom, vinuous, subtle fruity notes of white grapes and apple, tannins, wood, spicy Saison notes. Medium body, below average carbonation. Moderate sweet and light to moderate tart and bitter. Very complex, a lot of flavors to explore. Nicely balamced. I like it.
