As we bid farewell to the 2023 season, we're excited to introduce Coopers Square, a beer honoring English brewing traditions and celebrated as the quintessential Old Ale. Named after the square in Burton on Trent (now a modernized shopping area), it embodies the spirit of the historic brewing town and its Burton Cooper statue. This rich, satisfying dark ale expertly blends mature barrel-aged beer with freshness, inviting you to savor tradition and togetherness as we close this chapter. Cheers to a flavorful conclusion to the year!

Cooper's Square is brewed in the strong Burton Ale tradition, which dates back to the late 19th Century when London brewers started calling their aged strong ales "Burton" to latch onto the popularity of beer from the city of Burton On Trent. Around the same time, these ales shifted from pale to darker amber or brown colors as crystal malts and dark sugars emerged. It was common to brew a dry, strong beer aged for a year or more in oak casks and then blend it with a sweeter fresh beer before packaging and sending it to market.

We have recreated this approach by brewing a dark, malty, strong ale in Venice with heritage Chevallier malt from the UK and then blending it with mature casks of Helldorado, our pale barley wine aged for 36 months in 12-year Weller bourbon barrels. The result is a rich blend of layered malt and dark sugars balanced with the dryer mature profile of the barrels—a perfect holiday sipper.
