We unleashed the beasts to make magic on this very special beer! With 8 distinct strains of microflora, including Saccharomyces, Brettanomyces & Lactobacillus, and ten months on oak, we crafted a complex, mildly tart and highly drinkable beer, then dry-hopped the living daylights out of it with cryo Citra and Cryo Centennial.

Nice tart, barrel and funk. Some citrus, sharp finish

Deep but very clear, almost crystal clear coloured body with a nice orange glow against a subdued copper body with a thinnish, one to two centimetre tall off-white head that fades slowly and leaves a subtle lace on top. Aroma of very nice and super funky foeder, spontaneously fermented and especially tart, yeast notes with a light dose of grass and grain here, but the soured, oaky, cedar and dry notes are dominant in a great way and seem to definite this beer just in the nose, almost immediately when holding the glass up to your nose. Light to Medium-bodied; Strong funky foeder and soured yeast note shows up at first with a dry quality, some light malts, a dash of hay and grass, but a bit of the tart and funky yeast shows through everything and brings out a more dryness and a lot more grassy and herbal qualities, but this is very crisp and subdued throughout. Aftertaste is enjoyable with a great complexity for the style, especially from the foeder and funky yeast notes, but the dryness here is very large and great, especially if that's what you're looking for. Overall, a very nice and especially complex beer that brings out the dry, grassy, herbal and tart notes with a nice complexity throughout - great to sample, especially as my first beer back home in the states after two weeks abroad in non-beer countries! I sampled this sixteen ounce, pint-sized can, purchased from La Bodega in Anchorage, Alaska on 05-October-2021 for US$5,75 with the tagline 'criti' on the bottom and the date of '05/21' sampled at my house here in Washington on 15-August-2022 after returning from a two week trip down South with my wife and three kids in South America.

Can from City Beer store. The Brett and lacto dominate the aroma and flavor. Clear gold-copper with white head.

Can from Cap Tap. Pours clear coppery gold with a frothy white head. Aroma of Brett and Lacto. Med plus body. Flavor of Brett, Lacto and non-musty oak. Lightly tart; fairly dry; lightly bitter. Good stuff on the little critter pathway.
