Our TIPA game has been ever evolving here at Polly’s since that first brew of DDH Spur back in 2020 and we’re back once again with our latest step into this incredibly complex and intense evolution of the IPA style.

All Sure Things takes two hop varieties that have interwoven themselves throughout our history in Citra and Galaxy and amplifies them up to eleven, with a dry hop charge touching 30g/l of flavour. Expect to find bombastic levels of fresh cut citrus fruits, and insane amounts of tropical fruits positively bursting at the seams from this all in, maxed out beer not for the faint of heart.

Creamy white good mostly lasting head. Yellow colour. Moderate malty and hoppy aroma. Heavy bitter flavor. Long heavy bitter finish. Creamy palate.

Can @ Fonefan tasting. Hazy yellow with a white head. Aroma is sweet, malty, fruity and moderate hoppy - fruity. Flavor is very sweet and light bitter. Dry and light bitter finish with some alcohol. 050425

Can @ fonefan tasting. Small head with short duration. Color is hazy golden. Aroma and taste are rich tropical fruits, citrus, hops, flowers and malt. Nice bitter fruity finish.

Hazed dark orange topped with a just off white cap that retains well.
Nose is orange zest, grass, pineapple, mandarin, melon, mixed tropical fruit esters.
Taste comprises grapefruit, light pine needle, melon, hop spice, dank spike, bitter sweet tropicana.
Medium bodied, fine carbonation, semi drying close spiked with juicy come grassy hop bitterness allied to a mellow boost.
Okay TIPA ... doesn't run silly sweet but the flavour profile doesn't reach the heights of others of this ilk.

Can. A light haze on this gold beer, small and short lived pale cream colour head. Smooth palate, some viscousity, decent fine minerally carbonation on the back end. Smooth pale malts, a pronounced creamy sweetness. Some vague notion of banana like esters. Rich cooling pine into a fairly exotic tropical fruits vibe, Galaxy tasting quite Riwaka like here. Soft and mildly ripe citrus. A touch of vodka and orange and tropical fruits on the back end that also brings a mild hop spice. This was fun! Many other breweries have done much less obviously boozy tipas but, I like the way this Polly Tipa lays all its cards on the table and says fuck you!

Can shared at Bounre. Slight hazed golden colour with a =white head. Aroma and taste are fruity sweet and slight dank, hints of booze. Medium body.
