Old ale initially fermented with Belgian trappist yeast in and matured in bourbon and cognac barrels with Garden Party. The secondary fermentation with wild yeast transforms the yeast flavours into complexity without much acidity. Fat, intense aroma of dried fruits, coconut, vanilla and coffee. The sweetness is complemented by raisin, dark rye bread and chocolate and balanced by warming alcohol. Extended maturation on lees provides almost meaty flavours not unlike bacon.

Sample. Lightly hazy dark brown, small head. Aroma of cognac, caramel and banana. Sweet with full body and dense, rounded mouthfeel. Caramel, dark bread and cognac. Long bitter finish with some warmth.

Bottled. Brownish amber colour with a small beige head. Aroma is sweet malts, some figs, plum and mild toasted tones along with some slight alcohol tones. Flavour is raisins, some red wine, mild barrels, alcohol sting and some plummy tones as well as some sweet maltiness. Somewhat dry finish and palate with a wee bit of spiciness kicking in too.

Frothy off.white good mostly lasting head. Dark amber colour. Moderate bitter flavor. Long moderate bitter fisih. Creamy palate.

Bottled. A hazy red beer with a tan head. The aroma has notes of whiskey, caramel, and malt. The flavor is sweet with notes of whiskey, caramel, and malt, leading to a sparkling finish.

Bottle # 127/284. Ratebeer Odense Spring Sipper, 2019. Pours ruby amber with a small creamy head. Wood, bourbon, licorice, Dark fruit, brun lagermands. A tad too overcarbonated. Tasty.

Bottle @ Ratebeer Odense Spring Sipper, 2019. Hazy chestnut with a lasting off-white head. Aroma of plums and dried fruit with coconut, vanilla and bourbon. Sweet malty flavour with complex fruit and oak.

Bottle. Pours a dark amber ruby color with a small off-white head. Has a fruity malty woody caramel dark fruit and vanilla aroma. Fruity malty woody caramel dark fruit flavor with hints of vanilla and cognac. Fruity malty caramel dark fruit woody vanilla and cognac finish.

Bottle@Jespers - Dark brown to black with a brown thin ringed head. Toasted and sweet malty with some sweet notes of toffee and caramel, dried fruit, medium to full body, some resonating cognac and bourbon infused wooden notes and spices into the malty finish. Lovely.
