Saison I is brilliantly golden yellow in colour with a robust meringue like foam. We fermented at cooler temperatures to encourage more citrussy notes and promoted the spice character from the yeast by adding crushed coriander, pink peppercorns & grains of paradise alongside European noble hops. Refreshing, dry and slightly bitter, the grist includes both spelt and buckwheat providing a rustic quality and a fuller body, it’s the perfect spring time beer.

Tap at CBG2024, Helsinki. Color is slightly cloudy deep golden with small white head. Aromas and flavors: Spices, Floral spices, Belgian yeast, malts.... Nice!

(Keg at Craft Beer Garden 2024, Friday session) The beer poured golden and hazy. Its head was medium sized and white. Aroma had fruitiness, spiciness, malts and black pepper. Palate was medium bodied with medium carbonation. Flavours were fruitiness, spiciness, Belgian style yeast, black pepper, honey, malts and bitterness. Aftertaste was spicy and bitter. A nice spicy brew.

Can at home in Hackney - picked up from Clapton Craft. Pours clear gold with a tight, foamy white head. Light sweet flavour with mellow yeast expression, sun-kissed wheat flakes, a little hay, tangerine peel. Light bodied with massaging carbonation. Finishes with light doughy biscuits, wheat, a lick of grass, straw, yeast, citrus peel. Tasty.

Keg at Craft Beer Junction, 31/05/24. Clear golden blonde with a white cap that retains well. Nose is grass, herb, saison yeast, lemon rind, stale bread, hedgerow. Taste comprises grains, yeast esters, straw, herb, lemon nip. Medium bodied, fine carbonation, semi drying close. Tidy easy drinking saison ... ticks all the style boxes.
