Barrel Aged Imperial Stout

Aged in Single Malt American Whiskey and Peated Single Malt Whiskey barrels from Westland Distillery (Seattle, WA).

High above the forest floor, the crowns of mature trees mingle and blend to form the overstory. In this bottle, mature, barrel-aged stouts mingle and blend to become Overstory, our decadent expression of Imperial Stout built on layers of stout, wood and spirits.

Aroma: roasty, oak, a bit of whiskey notes.
Taste: pretty sweet, a lot of dark sugars, wouldn't assume it has this taste based on the aroma.
Overall: enjoyable, but lacks barrel character.

Poured from 355mL can (2025 vintage; 12.3% abv; canned Nov 2025). Very dark brown with minimal off white head. American whiskey barrels with very feint background charred peat, dark sugars, decent.

Dark brown. Thin head. Has a nice bourbony accent, sweet but balanced malt character. It has a bit of heat in the finish but is otherwise a solid BA impy.

12 oz can poured, picked up at Special Brews. Pours her black, with a somewhat gushing tan foam head. This series has been nothing short of incredible. Big whiskey nose upon cracking the can. A touch of peat, and a hint of caramel also present on the aroma. Gentle body to this imperial stout, allows for easy drinking. Whiskey sits up front here, and more subtle notes of tobacco and espresso. A slight dark chocolate lingers late. Smooth tasting imperial that's an absolute barrel show off. Love this.

12 oz. can, pours black with a small tan head -- seems like a thin body for the style. Aroma reveals a light but all-encompassing whiskey barrel character, with light sugars and a hint of roast. Flavour reveals plenty of subtle whiskey barrels, lots of wood, gentle dark sugars, and a nice toasted malt base. The barrel imparts a very woody, nicely attenuated (but still amply sweet), slightly boozy character. This drinks very easily, as the body is on the lighter side for the style, which I appreciate, as it's not too heavy and allows the fine barrel character to shine. Excellent.

500ml bottle from Tavour. 2022 vintage. Dark brown pour, brown head. Roasty malt aroma with notes of sweet chocolate. Taste is sweet and smooth, chocolate, light boozy notes. Subtle, roast, fudge. Wasn't expecting this quality. Wow! So tasty, sublime.
