Trace Elements is a Wild Grisette/Pilsner Hybrid. Fermented in stainless first with German Lager yeast, then finished with our house wild cultures and lightly dry hopped with aged Saaz and Ultra hops. This is intended to be a very light and easy drinking saison, with a touch of bitterness, a touch of acidity, and a touch of funk.

Admin Note: Released in 2017. This is out of production and is different than the later released Trace Elements brewed with coriander and orange zest.

Bottle 750ml. @ Scooper Tasting. [ As Speciation Trace Elements ].Clear medium orange yellow colour with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, sweet malt, fruity malt, moderate to light light heavy yeasty, leather, brett, fruity yeast, funky, green grapes, green apples. Flavor is moderate sweet and light to moderate acidic with a long duration, green apples, grapes, funky, brett, light wood - oak. Body is medium, texture is oily to watery, carbonation is soft. Bottle. Creamy white good mostly lasting head. Yellow colour. Moderate malty and hoppy and yeasty aroma. Bretty. Moderate bitter nice bretty flavor. Long moderate bitter fiknish. Creamy palate. Citrus notes.

Bottle @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are brett, citrus, fruits, barnyard, leather, hops and malt. Nice sour finish.

Bottle, 4.5%. Hazy golden with big off-white head. Aroma is malt, fruit, brett and hop. Flavour is malt, brett, lemon, grapes, hop, little sweet, fruit and a little dry.

Sampled from the tap at the Craft Beer Cellar. Pours a clear gold with a white head that dissipates slowly to the edges. Aroma has lots of flora and sweet light fruits with oats and light grains backing. Flavor has light tart fruits with some oak, hay and grains backing.

750 ml bottle into tulip glass, bottled on 9/12/2017. Pours slightly hazy medium golden/yellow color with a 1-2 finger dense and rocky white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of lightly tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk, white wine vinegar, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt notes; with solid strength. Taste of big lightly tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk. white wine vinegar, and yeast earthiness. Moderate peppery yeast spiciness, herbal/grassy bitterness, and light-moderate lactic tang/tartness on the finish. Lingering notes of tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, white bread, light funk/vinegar, and yeast earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt flavors; with an awesome malt/tart/bitter/spiciness balance; with zero puckering/astringent flavors after the finish. Moderate increasing dryness from tart/bitter/spiciness and carbonation. Medium-high carbonation and light-medium body; with a very smooth, moderately crisp, and grainy/sticky/acidic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 4.5%. Overall this is an excellent wild grisette. All around great complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink; with the modestly bitter/spicy/lactic/drying finish. They fermented a Pilsner and then bugged it up in stainless. Pretty unique, but still tastes like a wild saison all the way through. Awesome well rounded Brett complexities with mild Lacto; nice earthy hop balance and solid pils malt backbone. A really enjoyable offering.
