A stainless steel aged saison, fermented with out house culture of wild yeasts and microbes, conditioned on second-use raspberries and bacchus skins collected from Gutter & Stars Wine, grown in Crouch Valley (Essex). Tasting: Jammy, Floral, Earthy, Acidic, Dry. Production Time: 8 months.
