Infinite Cérise draws on British and Belgian brewing techniques. Starting off as a boring brown ale, it was fermented in oak barrels for several months with our very own mixed culture to make a sour beer with a hint of sweetness before being blended with sour cherry purée. This gave a modern, lower strength version of the traditional Flanders red ales, spiked with cherries. A beer with prominent summer and distinctive winter flavours, perfect for the cooler months.

Bottle from the ISBF21 box. Aroma is sweet and vinous. Opaque ruby tinged brown. Foamy white head soon thins out. Light-medium sour. Vinous and fruity but not pushy. Woody edge. Medium bodied. Slick verging on oily. Flat carbonation. Long somewhat astringent finish. Enjoyable if restrained... or relaxed perhaps.
