Crafted from local honey from the Little Bee Farm on the south shore of Nova Scotia, this off dry mead has lovely subtle aromatics and a medium bodied, velvety palette.

750ml (thx, Renny!) @ Matt's house. Appearance: hazy blonde with no head. Aroma: half-unfermented honey, sweet, phenols, not sophisticated or pleasant. Taste: along the same lines. Overall: meh.

750mL bottle. Pours has gentle honey, some aromatics. Flavour has light honey, herbal notes, nice amount of sweetness, getting a bit rougher as it warms up. Smooth on the palate. A bit rough, a bit too much alcohol. Plenty of honey character, but needs work.

750mL bottle, pours a hazy blonde with a tiny white head. Aroma has tons of bees wax, a sort of dry white wine, and a touch of glue. Flavour is pretty rough, with bees wax, light floral notes, and low-to-medium sweetness. A bit rough but pleasant enough. Not much complexity nor particularly cohesive. Not great, but not terrible.

Hazy, no head. Lots of honey on the nose. The mead is basic, the honey is cloverish, and the body sweet and sticky. Not bad, in terms of drinkability but certainly simple.

Poured from 750mL bottle. Hazy pale blonde with very minimal white head. Soft floral honey, some feint manure in the background, simple, okay.
