We’re kicking off our 2024 cycle of barrel-aged stouts with a blend composed primarily of 1 year-old beers that are all blooming fast. In general, we don’t really start tasting beers from the wood cellar until they’ve spent 9-12 months in cask, and it’s around this point in time in their maturation cycle that some casks start to really pop. Just as frequently, there are some casks in these cohorts that remain too young, green, closed, or aggressive. Sometimes it happens with casks from the same distiller with the same pedigree, re-filled by us with the same beer and then stored-by-side for months on end. How do those differences come to be? It’s the mystery of barrel-aging.

Fortunately, we found that a few threads of these beers– especially ones in some Union Horse Bourbon casks and some classic Heaven Hill Bourbon barrels were especially ripe. They expressed a good bit of roast, some green woodiness, even a hint of underripe banana and nougat. We loved the body and oak-expression in these casks and paired them with some 2- and 3-year old barrels that amplified the perception of spirit and sweetness in the blend. On paper this looks like a straight-shooting imperial stout in whiskey barrels, but selecting the right blender casks to achieve that balance required a deft touch. Cheers to a new year of exciting beers coming from our wood cellar.

22oz bottle. Pours black with fast-fading tan head. Aroma has bourbon, roast malts, dry wood. Flavour has bourbon, wood, malty stout base, charred barrel. This is a fantastic barrel-forward imperial stout.

22oz (thx, Matt and Renny!) @ Sales Force. Appearance: very dark brown with a dark beige head. Aroma: loads of American oak, no sweetness, charred oak. Taste: a lot of American oak and charred oak, moderately sweet, some meaty notes. Finishes roasty and ashy. Overall: pretty good.

22 oz. bottle, pours jet black with a small tan head. Aroma has plenty of meaty notes, medium roast, intense charred oak, fermented out dark sugars, and dry oats. Flavour is dominated by intense American oak barrels -- so much charred oak -- a little bourbon, medium roast, oats, and bready malt. Dominated by the charred oak. Also a bit boozy and harsh, but there's plenty of oaky depth and complexity. Very tasty extreme BA stout.

Dark body with dark tan head. Malty aroma with bourbon notes. Flavour starts out with rich maltiness then goes to stinging barrel.

Bomber - thick, jet black pour - nose is big toasty coconut oakiness, vanilla, chocolate, marzipan - full in the mouth, thick mouthfeel - vanilla, coconut, and chocolate sweetness up front is balanced well by a late acidity that brings with it jammy red wine notes, oak, black cherry, tamarind - warming but not boozy finish - warmth and the raspberry jammy wine notes linger long into the finish - I dig it.

Bomber. Pours a pitch black hue with a medium deep brown hue. Looks amazing. A big sweet nose, woody, licorice, roast, cocoa. Big bourbon, vanilla, some dark fruit, leather. The palate is lovely, oily, a thick palate. The chocolate is massive, but nothing is overly sweet or unbalanced.
