Port wine finished bourbon barrel aged Belgian quad
In late 2022 we acquired freshly emptied ex port wine barrels that were used to finish Okanagan Spirits bourbon. We knew we had to brew something big and bold for these barrels, and that's just what we did. This Belgian quad was brewed with our favourite Belgian malts, hopped with hallertau mittelfrüh and heaps of Belgian dark candi sugar in the kettle to give us that eye watering ABV and molassas flavour, we then laid this quad down in the port wine finishing bourbon barrels for 12 months. What came out of the barrels is a decadent sipper, with layers of candied stone fruit, cacao cherries, slow-toasted oak, bourbon & a touch of umami. One to be shared and savored.

473mL can. Pours dark copper with almost no head. Aroma is lovely; tons of wood, dried berries, Belgian yeast. Flavour has a punch if port, wood, raisins, oak. Definitely has some quad flavours, but feels like more of a strong ale. Still very excellent, great barrel profile.

473 ml can. Pours a deep mahogany color with light head. Aromas of candi sugar, raisins, soft sweet bourbon and toasted malts. Flavors follow same but alcohol is quite prominent and hot. Can’t really get any port with the level of alcohol.

Poured from 473mL can. Clear dark amber brown with minimal off white head. Woody, bourbon and port notes, the base beer is a bit light, could use some more depth, but the port is what really lends itself here. Decent.

473mL can, pours a deep dark reddish brown with a small beige head. Aroma brings out a nice bourbon and port wine combo, with some Belgian yeast, and a touch of bready malt. Flavour is integrated and subtle for the style, with bourbon barrels upfront, with dry toffee, bready malt, and dry port wine barrels. Integrated well, though not exactly authentically quad-like; just a nice BA strong ale.

Dark amber colour, clean, not much head. Vinous aroma, and malt. Good body, but also too boozy; malty backdrop, but the malt is hidden by the strong booze, and wine.
