Made with a blend of Salt Spring Island eating apples and heritage varieties like Yarlington Mill, Belle de Boskoop, King, and Blenheim Orange. Fermented by native yeasts, including some brettanomyces, and barrel aged for over 2 years, and bottle conditioned to carbonate. Dry yet bold and full-bodied, with pronounced funky, earthy, and oaky notes.

Opaque dull yellow appearance, with no head of course. Toasty, nice apple. Medium tart palate with complex apple notes.

Bottle pour at FHF 2024, pours a cloudy blonde with a small white head. Aroma is dominated by the brett upfront, with light oak, crisp apple skins. Flavour is funky and dry, with plenty of brett, oak, and apple skins. Not bone dry—there's just enough residual sweetness to make this very drinkable. Very good.
