Intermodal is our 100% spontaneously inoculated wild beer, created in a style inspired by traditional lambic producers. During a window of specific overnight temps in the fall each year, we take traditional turbid wort, let it slumber overnight in the open-air coolship, and allow the finest wild yeast and microorganisms to join in.

And why do we go to the trouble?
Using traditional brewing techniques is fun. There is an element of surprise. The tart/funky flavours are a nice reward!
The 2023 batch was divided into two — a classic version and a cherrified version. Both are light, tart, funky, extra bubbly, and excellent evidence that good things come to those who wait (3 years).
This batch was made with fresh Ontario cherries. Extra yum.

Hazy reddish/pink pour, with a medium white head. Aroma is sharp, tart cherries with some lemon zest. Sharp, clean, tart mouth feel, with a low bitterness, and sharp carb. A nice funky, tart cherry Ales.

Pinkish colour. Slightly hazy. Tart, and well-balanced ale, with a lightish cherry character.

Bottle at Farmhouse Fest 2024. Pours cloudy pinkish red. Aroma has dry wood, a salty, very subtle cherry. Flavour has cherry pits, dryish grass. Profile is very clean, well-executed.

Bottle pour at FHF 2024, pours an opaque bright pinkish red with a small white head. Aroma brings out lots of bright tart cherries, wild yeast, and oak in wonderful cohesion. Flavour is bright, with a wonderful cherry expression—cherry pith and are skins—and oak and wild yeast in wonderful cohesion. Carbonation is above average and very fittingly so. Excellent.

FHF 2024. Appearance: clear pale copper with a bit rose head. Aroma: cherries, cherry stones, dry, some rustic notes. Taste: faded cherries, tart, a bit of rustic notes. Overall: not prominent, ok.
